Since inheriting his father’s parcels of old vines in 1990, François Cotat has become one of the most sought-after names in the Loire thanks to his cellar-worthy Sancerre. François' success and individuality can be attributed to his intense passion for creating the finest examples of Sauvignon Blanc and his exceptionally placed vineyards; his gift for producing long-lived wines from this varietal is unmatched. Four hectares of vines sit on outstanding terroirs outside the village of Chavignol where the steep south facing slopes are rich in Kimmeridgian marl, the same clay and limestone soils that give Chablis its distinctive character. Organic viticulture combined with densely planted vines, ultra-low yields and relatively late harvesting produces fantastically flavoursome fruit. In the winery, traditional non-intervention winemaking is the rule with little handling and no fining or filtration.
