    This elegant St.-Emilion has filled out nicely over the last decade. From barrel and post-bottling, I thought it might turn out austere, but that does not appear to be the case. It offers a deep ruby/purple color as well as copious aromas of black cherries, crushed rocks, and earthy undertones. While not a blockbuster, it is beautifully balanced and pure, revealing slightly more depth and richness than I expected. Drink it now and over the next 10-15 years.

    A stylish, elegant and restrained 2000, this medium-bodied wine reveals notes of strawberry jam intermixed with black cherries, minerals, oak, and herbs. The tannin is sweet and the mid-palate firm, even beefy. This is an attractive, medium-bodied effort with impressive ripeness, length, and balance, yet it is not a blockbuster. Anticipated maturity: 2008-2020.

    This is the product of the same management team as at Rauzan Séglas and the winemaking input of Michel Rolland. As much as 72% Merlot went into the final wine, more than ever before, and the result is a mildly decadent blend of toast, yeast extract that is sweet and round, though arguably expresses winemaking more than the old character of the (pre TCA infection in the cellar) vineyard.

    Good colour. I think the new team have now finally got it right here at Canon. Rich, chocolaty, old-viney nose. A bit raw but not forced. Fullish body. Very good structure. The tannins are ripe. There is a lot of grip and the wine is cool and very rich. Good power. Lots of depth. Real class. Very fine. From 2010.

Château Canon

Château Canon is located on rich limestone soil slopes southwest of the town of St Emilion. It is known for its muscular style which when young can be quite backward and tight but with age can evolve beautifully. Now owned by Chanel, who have invested heavily, Canon is going from strength to strength.

Region

St Emilion

South of Pomerol lies the medieval, perched village of St Emilion. Surrounding St Emilion are vines that produce round, rich and often hedonistic wines. Despite a myriad of soil types, two main ones dominate - the gravelly, limestone slopes that delve down to the valley from the plateau and the valley itself which is comprised of limestone, gravel, clay and sand. Despite St Emilion's popularity today, it was not until the 1980s to early 1990s that attention was brought to this region. Robert Parker, the famous wine critic, began reviewing their Merlot-dominated wines and giving them hefty scores. The rest is history as they say. Similar to the Médoc, there is a classification system in place which dates from 1955 and outlines several levels of quality. These include its regional appellation of St Emilion, St Emilion Grand Cru, St Emilion Grand Cru Classé and St Emilion Premier Grand Cru Classé, which is further divided into "A" (Ausone and Cheval Blanc) and "B" (including Angélus, Canon, Figeac and a handful of others). To ensure better accuracy, the classification is redone every 10 years enabling certain châteaux to be upgraded or downgraded depending on on the quality of their more recent vintages.
