    The Dujac 2005 Chambertin combines fruit from the vineyard of that name with a majority of fruit from the Clos de Beze. Scents of rose petals, black tea, black raspberry, black pepper, and cassis stream from the glass. A wonderfully soothing, glycerin-rich, silken-textured pool of sweetly ripe and rose-scented fruit fills the mouth, while dark shadings of singed meat and wet stone well up from seemingly inexhaustible depths of extract. For all of its palpable density and sheer intensity, this is clear, refined, and displays elegant poise in its long, evocative finish. More than ample tannin is no doubt present for long keeping, but it is so fine-grained – and the gustatory show going on around it so dazzling – as to pass almost unnoticed.

    Amazingly they have five barrels of this. Paler than many, with oak and fruit not yet harmonised. Sweet and still quite simple. Not desperately expressive when I tasted it. A hint of boiled sweets/candy, and lots of very fine tannins. Work in progress. Drink 2018-2032.

Jacques Seysses bought a small domaine in Morey-Saint-Denis in 1967 called Domaine Graillet and renamed it after himself, Domaine Dujac. Jacques spent several years learning winemaking from the late, great Gerard Potel at Domaine de la Pousse d’Or and he has been a great proponent of including the stems in fermentation. Chambertin

Gevrey Chambertin lies well to the north of the Cote de Nuits. It has no less than 9 grand cru vineyards and the most famous of these is Chambertin. Often considered the greatest of all red Burgundies for its complexity, power and intensity, Chambertin's fine wines are unsurprisingly rare and are priced accordingly. They also need years to develop to their full potential, but are undoubtedly worth the wait.
