    The Domaine’s most important Premier Cru covering just under 5 hectares, with the fruit coming from four different locations and vines aged between 18 and 45 years. The quality of the fruit means that the wine can cope with 100%-barrel ageing and 15% of the fruit is also vinified in cask. A more flamboyant style for the vintage. Smoky cappuccino aromas, with a striking creamy texture, spice and warm toffee. Very good depth and a little more Côte de Beaune in character than some in the cellar. Tremendously appealing.

    The 2021 Chablis Mont de Milieu 1er Cru, which sees nine months in barrel like Pinson's other Premier Crus, has a nicely focused nose with orchard fruit, dewy meadow and light crushed stone aromas. The palate is well-balanced with a sapid entry, more malic in style than its peers, with pear and fish scale notes towards the finish. I like how this gets the saliva flowing, though I might keep it in the cellar for 12 to 18 months.

    Slightly riper aromas display excellent Chablis typicity on the aromas of mineral reduction, green apple and oyster shell. There is once again very good size and weight to the medium-bodied flavors that possess a succulent, round and generous mouthfeel while exhibiting excellent punch on the stony and austere finale where a touch of wood emerges. This is lovely and worth checking out. Drink 2028+

    Clear mid yellow, toast and vanilla on the nose, as this wine is fermented in wood. It will integrate but it sticks out a touch at the moment. There is a concentrated saline middle to the wine covered by white fruit. Drink from 2025-2031.

The family team oversee 12 hectares of vineyards, including 2.5 hectares of Les Clos and 4.75 hectares of Mont de Milieu, from which they make extraordinarily fine and classical Chablis. They like to use oak barrels for maturation, although the influence of new oak is only ever a gentle whisper in the background of their steely wines. Chablis

Chablis is world famous for its fine white wines produced from the Chardonnay grape. The best vineyards are perched above the winding Serein river and are south or southwest facing ensuring better ripeness in this cooler climate. It has four appellation levels. Petit Chablis is the most modest and simple followed by Chablis, which is the largest and most prominent. Premier cru Chablis is the third largest appellation and encompasses almost 40 different climats or vineyards including the famed Montée de Tonnerre, Fourchaumes and Mont de Milieu. The most noble of all Chablis are the grand crus of which there are 7 climats in total Bougros, Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos and Blanchot. The wines of Chablis have remained some of the best value in the world, particularly their superb grand crus which can easily cost 50% less than its closest revered white grand cru neighbour, Corton Charlemagne.
