    The 2022 Chablis Les Preuses Grand Cru has a well-defined bouquet that gains intensity with aeration: Golden Delicious, kiwi fruit, light flinty aromas coming through with time. The palate is well-balanced with a fine bead of acidity. A little oak to be subsumed, though it falls down on the finish as if this Les Preuses runs out of ideas two-thirds of the way through. So, it ends on a bit of a flat note. Tasted blind at the BIVB tasting in Chablis.

    The 2022 Chablis Les Preuses Grand Cru, matured in stainless steel for 15 to 18 months, has quite a primal bouquet: tinned peach, grapefruit and touches of wet stone, cohere in the glass and gain complexity. The palate is well-balanced with a fine, edgy entry thanks to the line of acidity. Taut, focused and nicely composed with a slight bitterness towards the brisk and lively finish.

    In the same fashion as the Les Clos, very generous wood influence stops just short of overshadowing the attractively spicy and floral nose of shellfish, sea breeze and quinine. The medium-bodied flavors are rich to the point of opulence thanks to the abundance of sappy dry extract that also serves to buffer the firm acid spine shaping the wonderfully complex, persistent and balanced finale. This is oakier than I prefer but the density is such that if given time, it should successfully integrate. Excellent. Don't miss! Drink 2032+

    Billaud-Simon always produces a super-classy Les Preuses. A more restrained, racy style of grand cru. Less wood evident here, which lets the ripeness of the fruit shine through. Very nice acidity. Lots of enjoyment and mineral notes to finish. Long and elegant. 70-year-old vines from one plot. Three barrels used in 2022, with a small proportion (13%) of new oak. Drink 2026-2035

    A fine glowing pale lemon colour. Blend of tank and barrel. This is much more precise and focussed than Les Clos, with an exceptional class and elegance and a finely integrated mineral acidity. This is very distinguished, with impeccable balance and persistence, a Preuses whose own character transcends vintage. Drink from 2029-2040. 5 stars

The Billaud-Simon name is long-established in Chablis, dating back to 1815 when Charles-Louis-Noël Billaud purchased his first vineyards. The estate remained in family ownership for 200 years until Erwan Faiveley purchased Billaud-Simon for Joseph Faiveley in 2015. This represents a new era for the Faiveley family, one of the Côte d’Or’s most significant vineyard owners, now investing their expertise and commitment to producing great wines in the Yonne and Chablis with approximately 18 hectares of exceptional vineyard holdings including four premiers crus and four grands crus. Under the guidance of Wine Director Olivier Bailly, they remain respectful to the traditions of the estate and continue to sell the wines under the Billaud-Simon name. The style is graceful and pure. Region

Chablis

Chablis is world famous for its fine white wines produced from the Chardonnay grape. The best vineyards are perched above the winding Serein river and are south or southwest facing ensuring better ripeness in this cooler climate. It has four appellation levels. Petit Chablis is the most modest and simple followed by Chablis, which is the largest and most prominent. Premier cru Chablis is the third largest appellation and encompasses almost 40 different climats or vineyards including the famed Montée de Tonnerre, Fourchaumes and Mont de Milieu. The most noble of all Chablis are the grand crus of which there are 7 climats in total Bougros, Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos and Blanchot. The wines of Chablis have remained some of the best value in the world, particularly their superb grand crus which can easily cost 50% less than its closest revered white grand cru neighbour, Corton Charlemagne.
