    The 1995 Krug is gorgeous. I chose it because one of my guests loves Krug and I thought the 1995 would have the right amount of complexity to pair beautifully with the smokiness in Saison’s caviar. Although the 1995 Krug is not a truly epic wine, it is in a sweet spot right now. 94/100

    The 1995 Vintage provides a fascinating contrast to the 1996. This is a tightly wound, sinewy Champagne loaded with brioche, toasted oak, lemon rind, flowers and minerals. The mousse is extremely fine and the style decidedly more linear and fresh than the 1996. Though deceptively medium-bodied in style, the wine appears to be built for extended cellaring.

    The 1990 Krug made the Top 250 two years ago. It is still one of the greats today, but I am convinced that the newly released 1995 is even more impressive ("What?" I hear you cry in perfect unison). It combines the sleek power, sensual wild honey and brazen, buxom fruit of the 1990 with a grip and vivacity that embodies the 1995 vintage and does wonders for the libido. Krug is always a treat, and this wine is admittedly the price of a small house in the Cotswolds, but I would forgo late night cheese on toast for a year to save up for a bottle of this beauty. It is every bit as good as you'd expect it to be!

    A very youthful '95. Delicate. Intense aromas of ginger, citrus, candied berry and multigrain bread turn to honey, roasted almonds and graphite on the palate. It's all underscored by creamy texture and a precise structure that keeps it persistent through the long finish. A picture of precision and intensity. Drink now through 2025.

Region

Champagne

Champagne, the world's greatest sparkling wine, needs little introduction - with imitations produced in virtually every country capable of growing grapes, including such unlikely candidates as India and China. The Champagne region, to the north of Paris, has the most northerly vineyards in France, with vines grown on slopes with a southerly exposure to maximise sunlight. The soil is chalky, providing an excellent balance of drainage and water retention. The key to the wine is in the cellar - the bubbles result from a second fermentation in the bottle and the rich toasty flavours in great Champagne come from extended bottle ageing on the yeasty lees. Until the eighteenth century, the wines produced in the Champagne area were light acidic white wines, with no hint of sparkle. However glass and closure technology developed at that time and it was not long before Dom Perignon, a Benedictine monk at the Abbey of Hautvilliers, started experimenting with blends and produced the first recognisable champagne. In a world accustomed to still wines, the advent of champagne was almost a flop. It was saved when it became fashionable at the French court as a result of Louis XV's mistress Madame de Pompadour commenting "Champagne is the only wine that lets a woman remain beautiful after she has drunk it." And the rest is history, with famous (or infamous) champagne lovers including Casanova, Dumas, Wagner, Winston Churchill, James Bond and Coco Chanel.
