Sitting alongside Montmains, the soils of La Foret contain more stone and less clay than their Premier Cru neighbour, resulting in a sprier style of wine. A warmer 2023 vintage has given the perennially lean and lively Chablis added textural richness, while notes of apricot, white peach, and salted almonds govern the nose and palate, before giving way to an almost sherbet-enlivening finish. This is classic Chablis full of vim and vigour.

With 65-year-old vines on a mixture of limestone and blue clay soils, the southeast-facing vineyards in Montmains yield a nicely rounded style, marked by distinct minerality. The nose displays blossom and ripe orchard fruit in the form of golden apples and Conference pear, with delicate notes of dry toasted hazelnut. While there is some textural richness, the wine has a flinty core that is like a needle through velvet. One for the Chablis purist.

A discreet if perceptible dollop of toasty oak sets off ripe aromas that also reflect an exotic character and just enough Chablis typicity to be persuasive. Here too there is good vibrancy and volume to the rich-to-the-point of opulence medium-bodied flavors that exhibit good persistence on the bitter lemon-inflected finish. Once again, better depth is necessary so a few years of forbearance are in order.

One of the better-known Premiers Crus vineyards, the right bank Fourchaume faces south-west, yielding a richer, less mineral-driven wine. A more white-fruit cru, the perfumed nose shows peach and mangosteen notes beneath a mantle of jasmine blossom. With more ripeness and concentration of fruit on the palate, and less acidity than its fellow Premiers Crus, this offers earlier access for the discerning drinker.

The domaine’s most important Premier Cru site, covering a little under 5 hectares, the fruit is sourced from four different locations which share the same Kimmeridgian soils as the Grands Crus. Vinified with 15% new oak barrels, there is a complexity and concentration to the wine, where accents of lemon curd, ripe pear, and vanilla are balanced by subtle spice. There is a creaminess to the palate, yet still with that Chablisien energy and drive that leaves you wanting more. Simply superb.

The rich, full-bodied and markedly mineral-driven flavors brim with sappy dry extract while exuding a bracing salinity on the youthfully austere, lemony and sneaky long finale. Like all good examples of Les Clos, this is going to need time in bottle though 8 to 10 years should be sufficient.

Widely considered Chablis’ grandest Grand Cru, the Pinsons hold an enviable 2.5 hectares, and this is a site that is clearly in safe hands. Aromatically, the wine is already so complex, showing orange blossom, Japanese pear, and lemon zest against a backdrop of baking spice and gun flint. Complex yet elegant, the palate possesses superb balance where Les Clos’ natural energy is enlivened further by a lick of salinity on the finish.
