    Tasting the 2019 vintage at the same stage in its development, it was a noticeably shy cuvée. Nothing could be further from the truth with this superb representation of the 2020 vintage. This is a showstopper if ever there was one. Brightly aromatic, with a delicious combination of both yellow and white fruits. The initial attack is bright, driven and intense with characters of grapefruit and lemon zest. Very full on the palate and an elegant finish shows off this wine’s natural pedigree.

    A slightly fresher nose combines notes of floral and spice with those of more prominent Chablis character and in particular oyster shell. The detailed and noticeably more intense middle weight flavors brim with minerality that carries over to the balanced, wonderfully long and bitter lemon-inflected finish. This is lovely and a Vaudésir of finesse and delicacy that should age gracefully for a decade or more. Don't miss! Drink 2030+

    From three plots, two facing north, the other south. This is always a warm valley, and winemaker Olivier Bailly thinks Vaudésir and Blanchot are very similar. 100% matured in vats, with just the end of ageing done in wood to add a hint of spice. Ripe, generous, creamy but has a very good line of acidity as well. Quite warm, enticing, with an intriguing finish.

The Billaud-Simon name is long-established in Chablis, dating back to 1815 when Charles-Louis-Noël Billaud purchased his first vineyards. The estate remained in family ownership for 200 years until Erwan Faiveley purchased Billaud-Simon for Joseph Faiveley in 2015. This represents a new era for the Faiveley family, one of the Côte d’Or’s most significant vineyard owners, now investing their expertise and commitment to producing great wines in the Yonne and Chablis with approximately 18 hectares of exceptional vineyard holdings including four premiers crus and four grands crus. Under the guidance of Wine Director Olivier Bailly, they remain respectful to the traditions of the estate and continue to sell the wines under the Billaud-Simon name. The style is graceful and pure. Region

Chablis

Chablis is world famous for its fine white wines produced from the Chardonnay grape. The best vineyards are perched above the winding Serein river and are south or southwest facing ensuring better ripeness in this cooler climate. It has four appellation levels. Petit Chablis is the most modest and simple followed by Chablis, which is the largest and most prominent. Premier cru Chablis is the third largest appellation and encompasses almost 40 different climats or vineyards including the famed Montée de Tonnerre, Fourchaumes and Mont de Milieu. The most noble of all Chablis are the grand crus of which there are 7 climats in total Bougros, Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos and Blanchot. The wines of Chablis have remained some of the best value in the world, particularly their superb grand crus which can easily cost 50% less than its closest revered white grand cru neighbour, Corton Charlemagne.
