En Primeur | Domaine Pavelot

We are delighted to launch the wines of Domaine Jean Marc and Hugues Pavelot this vintage as one of our exciting new finds following the Grands Jours de Bourgogne tastings in March. The Pavelot family, with their 13 hectares in the Côte de Beaune, have been vignerons for many generations, but Hugues Pavelot represents only the 3rd generation of Pavelots selling the wines under the family name. Prior to the Second World War, all their fruit was sold to negociants in Beaune. In recent years, Hugues has taken the estate into organic viticulture and the domaine boasts some of the oldest vineyards in Savigny Les Beaune, with their Dominode and Gravains parcels planted over 80 years ago. They eschew excessive use of new oak, preferring all the natural elements to shine through in their wines, to offer a strong communal identity.

In 2023, they concentrated their picking in the early mornings, finishing at 1.00pm. This allows Hugues to vinify immediately on arrival to the winery in the afternoons in natural cellar temperatures. He prefers destalking and racked the 2023 wines after 12 months in cask to preserve and capture the fruit content. After a period of settling in tank, they will do an earlier bottling in 2025.

The family own a substantial 5 hectares of vines coming from 15 different plots in almost every sector of the appellation, running from northwest of the village down to the boundary of Chorey Les Beaune, with vines averaging 50 years of age. A vibrant fruit expression of fresh cherry and damson is interlaced with a hint of exotic spice. The succulence of fruit sits perfectly alongside the easy rounded tannins. Very attractive.

A centrally located Premier Cru on the lower slopes, characterised by its stony soils, which benefits from an excellent southerly exposure. Striking perfume of sloe, tayberry and sweet raspberry compote. The warmer location shines through in the palate, with delicious richness and subtle, fine tannins followed by a rewarding finish of vanilla spice. Charming and immediately pleasurable.

Taking its name from the Domio family, who were large landowners in the 16th century, the sandy clay soil and north easterly aspect of the vineyard, along with the Domaine’s 80 year old vines, make this an ever more appealing Premier Cru as climate change has an ever increasing impact. A more backward style, with a taut core, there is huge energy, drive and freshness. The fruit flavours are wild and gamey; this has a sense of attitude and all the prospects to age for many years.
